Berry Tiramisu made with Sugar Bowl Bakery Madeleines soaked in blueberry and orange juice, this easy summer dessert is perfect for the 4th of July or Memorial Day. The red and blue berries, combined with a creamy whipped topping, make it as festive as it is delicious.
Ingredients:
• Juice of 1 large orange
• ¾ cup water
• 6 oz frozen blueberries
• 10 Sugar Bowl Bakery Madeleines
• 1 tsp vanilla extract
• 8 oz whipped topping
• 8 oz mascarpone cheese
• 6 fresh strawberries, sliced
• 15-20 fresh raspberries
• 15-20 fresh blueberries
Equipment: • 2 (8x8-inch) glass dishes (one for soaking, one for assembly) • Blender • Whisk
Instructions: 1. Prepare the Madeleines: Arrange the 10 Madeleines in a single layer in one of the 8x8 dishes.
2. Make the Blueberry Soak: In a blender, combine the frozen blueberries, water, and orange juice. Blend until smooth.
3. Soak the Madeleines: Pour the blueberry mixture over the Madeleines and let them soak for 20 minutes.
4. Make the Cream Layer: In a bowl, whisk together the whipped topping, mascarpone, and vanilla. Refrigerate until ready to use.
5. Prepare the Berries: Slice the strawberries and set them aside with the raspberries and blueberries.
6. Assemble the Dessert: • Spread ¼ of the whipped mixture in the bottom of the second (clean) 8x8 dish. • Arrange the soaked Madeleines in rows over the whipped mixture. • Add a layer of fresh berries over the Madeleines. • Spread the remaining whipped mixture evenly over the top. • Arrange the remaining berries decoratively on top.
7. Chill & Serve: Cover and refrigerate until ready to serve. This dessert can be made the night before for convenience. Enjoy!
