Mini Cheesecake Bites

Mini No-Bake Cheesecake Bites made with Sugar Bowl Bakery Palmiers. Whip up this easy recipe for holidays like 4th of July, Memorial Day, or just for a Sunday brunch. Make the cheesecake base ahead, and store it in the fridge until you are ready to assemble.

You'll need:

• 8oz Cream Cheese (softened)

• 3/4 Cup Powdered Sugar

• 2 Tablespoons Sugar

• 1 Tablespoon Softened Butter

• 1 Teaspoon Vanilla Extract

• 1 Teaspoon Freshly Grated Lemon Zest

• 3/4 Cup Heavy Cream 

• 12 Sugar Bowl Bakery Palmiers

Instructions:

In a mixer with a whisk attachment add cream cheese, sugar, powdered sugar, vanilla and lemon zest. Whip for 2 minutes. Add heavy cream and whip for another 2 minutes until desired thickness. Refrigerate until ready to use.

When ready, add a portion of the mixture to a piping bag with decorative tip. Pipe onto Sugar Bowl Bakery Palmiers. Repeat with remaining Palmiers. Add fresh fruit like sliced strawberries and blueberries then serve!
